Samson's Swimming Video

So here is the promised video of Samson swimming out into Adam & Brittany's pond to fetch a football. It is funny how he swims more on top of the water but he wears himself out this way pretty quick. I am hoping he soon learns how to swim the normal doggy swim. When he finally got the ball; though you probably can't hear it in the video, we could hear him breathing really hard from shore! Anyway, enjoy! :)

Yellow Squash Casserole

So Jon's Mom sent a bag of yellow squash home with me from Arkansas. My Mom has a wonderful recipe for Squash Casserole and thus the cravings began... :)

Yellow Squash Recipe

1 Stick of butter, melted
2 Cups cooked Yellow Squash (I fry in skillet on stove til slightly browned)
1 Medium onion, diced *optional! :)
8oz Sour Cream
1/4 bag of Corn Bread Stuffin' Mix (dry, not cooked)
1 Can Cream of Mushroom Soup

Preheat oven to 350 degrees. Mix everything together, using only half of stuffing mix. Put the rest of the stuffing mix on as a topping & bake for 45 min to 1 hr. Enjoy!

Jon doesn't like this casserole (not a big veggie fan) so since it made a thin 9x13 pan, and I had been craving it so bad, I ate half of it that night for dinner. I ate the other half for lunch the next day. Will be a few weeks before I try to make it again. :)

Arkansas- Family Pictures

My Brother-In-Law Lance (Amy's husband) has a great studio in their house and was kind enough to help us all get together for a family picture while Jon & I were in town. I think they turned out great. I mean, when you have three wiggling kids and some squirming adults, it can be long and tiresome but definately well worth it! :)

Arkansas- Bentonville

On our way home from Eureka Springs, we went through Bentonville to get on the interstate.
In Bentonville, AR is where the Wal-Mart Distribution Center is and it is also the home
of the very first Wal-Mart. Pictured above is Sam Walton's "Walton's 5-10" Store which
is now the visitor center and is filled with history of the Walton's and about WalMart. It was really interesting and a cool place to stop!

Sam Walton's red pick-up

Did you know Sam Walton's dog was "Ol'Roy"? Thus where Ol'Roy Dog Food began...

Jon's nephew Trenton plays in the fountain while Angela holds him from falling in.

He looks a lot like his Uncle Jon when Jon was that age...

Arkansas- Eureka Springs

Inside the beautiful Thorncrown Chapel in Eureka Springs

The outside... just beautiful...

Looking down one of the streets in the "old" section of Eureka.

There is a lot of very different artwork there!

We traveled on the Eureka Springs & North Arkansas Railway...

The interior of the train was so neat!
I loved how the seats helped "turn" the car around on the tracks.
We had a fun two days together there!

Arkansas- Christ of The Ozarks

Where the makers of the statue are buried.

This is supposed to be a piece of the Berlin Wall.

The Christ of the Ozarks is in Eureka Springs, AR. This was our first day in Eureka Springs.

Arkansas - Lake and Pond Adventures

Chastin & I at Red River

The guys are trying to see who can see who can stand in the freezing
cold water of the Red River the longest. It was funny!

Samson & Preacher play fetch in Adam & Brittany's pond.
It was Samson's first time to swim. Preacher got him started and then we
couldn't keep Samson out of the water! They had so much fun!

Adam & Jon ride Adam's go-cart

Brittany, Chastin, & Adam Stephens at Red River.
We stayed the first few days with them when we got to Arkansas
and we had a lot of fun at the river, the lake, and hanging
out at their house.

The beautiful Red River! It was really hot out that day and the water
is always so cold. There is a mist on top of the river. The water is so cold
and clear you can see to the bottom even farther out.
